One-Pot No-Chop Veggie Korma

This is the emergency meal you can whip up entirely from ingredients you can keep in your freezer and cupboard. Too much traffic? Late night at work? Just a lot to juggle? Whatever else is going on in your life, this one-pot, no-chop dinner will take care of itself in 20 minutes.



Ingredients

3 cups of frozen vegetables (standard frozen mixed vegetables are great here, but you can also throw in frozen cauliflower, broccoli, or any other favorites)

1 14.5-ounce can of diced or sliced potatoes (drained)

1 cup of coconut milk

1 cup of canned diced tomatoes or tomato sauce

2 tablespoons of cashew or almond butter

1 tablespoon of garam masala powder

1 tablespoon of curry powder

1/2 teaspoon of red pepper powder

1 teaspoon of salt


Steps

Combine all of the ingredients in a medium pot over medium heat. Stir well, cover, and cook for about 15 minutes, or until the vegetables are fully cooked through. (Stir intermittently.)


Serves 2-4. Goes well with plain rice .
